After a few plates of Thanksgiving leftovers, it's time to spice it up! Try chef Simon Hall's Mashed Potato Cakes! A few ingredients and a little time are all you need for a delicious meal... anytime!
Four ingredient mashed potato cakes? Count us in! Whole 30 Chef Simon Hall, shares his success on the perfect leftover dish.
- 2 whole organic free-range eggs
- 1 cup almond meal
- 1 bunch green onions
- 4 cups leftover mashed potatoes
Chop 1 bunch of green onions and throw them in a bowl with your mashed potato leftovers. Add almond meal and crack the two eggs over the dish. Stir together.
Heat pan to medium-high heat and add clarified butter. Once the pan is hot and sizzling, scoop the mixture onto the pan. Fry each side of the potato cake for four minutes, or until the bottoms of the cake are caramel brown colored.
Plate and enjoy!
