Call it dressing. Call it stuffing. We call it delicious! This easy sausage stuffing recipe ticks all the marks for holiday flavor, AND adds a special grilled touch.
Grilled Sausage Stuffing Loaf
- 1 cup sage sausage
- 1 cup Finely diced Onion
- 1/2 cup Finely diced celery
- 1/2 cup Finely diced or grated Carrot
- 1/4 cup Fresh herbs “Poultry blend”, parsley, sage, rosemary, thyme
- 1/2 tsp Salt or to taste
- 1/2 tsp Black pepper or to taste
- 3 large Eggs
- 1 cup Chicken or Turkey broth
- 1/4 cup Melted Butter, cooled
- 8 cups 1/2-inch Bread Cubes any kind, crusts on or off as you choose
Preheat grill to medium, about 350 degrees. In a large frying pan over medium heat, cook sausage until lightly browned and fat has rendered. Add onion, celery and carrot. Sweat until onions are translucent. Add mushrooms. Continue cooking until mushrooms are cooked through and moisture has evaporated.
Add sweated vegetables to bread cubes, and toss until well combined. Add in herb mixture and toss again. Whisk eggs, chicken broth, and melted butter until combined, then mix into bread mixture. Season with salt and pepper, and taste. Add more seasoning if needed.
Pack stuffing into a buttered, foil-lined loaf pan, and cover with foil, crimping edges to seal tightly. Grill over indirect heat for one hour, checking at 50 minutes. Stuffing should be dense when completely cooked. Allow to cool completely, then slice.
Adjust grill heat to medium high, and cover grates with foil. Add sliced stuffing to grill and cook each side, 3-5 minutes, or until heated and grill marks form.
